Raspberry Chia Jam

Makes 4 oz. jar

Ingredients:

3 cups of fresh or frozen raspberries

1/3 cup chia seed

3/4 cup agave nectar

 or

sweeter of choice

1 tablespoon lemon

pinch of salt

Direction:

1.) Add the raspberries to a saucepan on low heat.

2.) Cook until the raspberries breakdown and become liquidly, about 5 to 10 minutes.

3.) Mash the raspberries with a spatula or use the back of a fork until ideal consistency is achieved.

4.) Stir in chia seeds, agave nectar, lemon juice, and a pinch of salt, and allow to cook for another minute.

5.) Remove from heat and keep stirring for another 3-5 minutes (this will help the chia seeds expand creating a jam-like consistency). 

6.) Once cooled,  store in an airtight jam jar with a lid and keep in the refrigerator for up to 2 weeks. 

To serve, smear jam on toast, fill in cookies, eat with yogurt or enjoy it straight from the jar!
