Tools: Toaster, Knife, and Cutting Board

Makes: 4 servings

Ingredients:

1 medium sweet potato cut into thick toast-like slices (peeling the potato skin is optional)

2 heaping tablespoons of your favorite nut butter or seed butter

1 banana, sliced 

¼ cup fresh blueberries

1 tablespoon hemp seeds

Directions:

1.) Sweet potatoes are round making it hard to cut on a surface. Getting a nice even lengthwise slice can be tricky, so slice one side of the sweet potato, and lay it flat-side down on the cutting board.

2.) Cut into ¼ inch slices. Try not to cut the potato too thin, otherwise it won’t hold its shape, and not too thick, otherwise, it will take too long to cook.

3.) Pop the “potato toast” into the toaster slots and crank up the toaster setting. It can take 5-10 minutes to cook depending on the strength of the toaster. 

4.) Once the toast is cool enough to handle, top with nut butter, slices of banana, blueberries, and hemp seeds.
