in a medium-sized container, add the milk, chia seeds, maple syrup, and mix until well incorporated. Store in the fridge for an hour or until all of the milk has been soaked up and the chia seeds become pudding-like.
In another bowl, add the pumpkin puree, maple syrup, and vanilla bean and mix well to combine.
Add a scoop of the chia pudding to the bottom in your favorite glass and spread it uniformly through the bottom followed by a scoop of the pumpkin puree, repeat the process until the top of the glass is reached.
Finally, top the parfait with your favorite toppings and serve immediately.
