Instructions
In a medium-sized pot, add the olive oil, onion, garlic, salt, and pepper. Sauté until onions have softened.
Add the tomatoes and cook until the tomatoes have broken down about 5 minutes.
Add the tomato paste, mint, oregano, sugar, and fry for 30 seconds.
Add the green beans and 4 cups of broth or liquid.
cook until the liquid has reduced to a thick-stew consistency, about 30-40 minutes.
Serve immediately with warm bread or creamy garlic yogurt.
