DRESSING:

avocado oil

Instructions
MAKE DRESSING:
Whisk the avocado oil, lime juice, rice vinegar, fish sauce or hoisin sauce, minced garlic, and honey in a small bowl and set aside.
MAKE SALAD:
Toss together the cucumbers, red onion, mint, cilantro, green onions, peanuts, and sesame seeds in a large bowl.
Pour the dressing over the cucumber mixture and garnish with more sesame seeds.
SERVE:
Serve immediately, or you can cover and keep it in the refrigerator for up to 24 hours.
