How To Make Thai Cucumber Salad

  1. First, whisk the avocado oil, lime juice, rice vinegar, fish sauce, minced garlic, and honey. 
  2. Then, in a separate bowl, toss the cucumbers, red onion, mint, cilantro, green onions, peanuts, and sesame seeds. 
  3. Finally, pour the dressing over the cucumber mixture. 
  4. Toss and garnish with additional sesame seeds before serving.

Store: This salad can be stored in an airtight container in the fridge for up to twenty-four hours.

Ingredients
 

SALAD:

  • 2 English cucumbers sliced
  • ½ cup red onion thinly sliced
  • ½ cup fresh mint chopped
  • ½ cup fresh cilantro chopped
  • 2 green onions thinly sliced
  • ½ cup unsalted peanuts
  • 1 Tablespoon toasted sesame seeds

DRESSING:

  • 2 Tablespoons avocado oil
  • 3 Tablespoons fresh lime juice
  • 2 Tablespoons rice vinegar
  • 1 Tablespoon fish sauce or hoisin sauce whichever you like best
  • 1 teaspoon minced garlic
  • 2 Tablespoons honey

Instructions

MAKE DRESSING:

  • Whisk the avocado oil, lime juice, rice vinegar, fish sauce or hoisin sauce, minced garlic, and honey in a small bowl and set aside.

MAKE SALAD:

  • Toss together the cucumbers, red onion, mint, cilantro, green onions, peanuts, and sesame seeds in a large bowl.
  • Pour the dressing over the cucumber mixture and garnish with more sesame seeds.

SERVE:

  • Serve immediately, or you can cover and keep it in the refrigerator for up to 24 hours.
