Instructions
Preheat the oven to 350°F. Lightly coat an 8×8-inch baking pan with nonstick spray.
In the bowl of a stand mixer, combine the blended cottage cheese, eggs, coconut sugar, and vanilla. Mix until smooth.
In a separate bowl, whisk together the cocoa powder, flour, baking powder, and salt.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
Fold in the chocolate chips.
Pour the batter into the prepared baking pan and spread evenly. Sprinkle the top with flaky sea salt if desired.
Bake for 18 to 25 minutes. Bake closer to 18 minutes for softer brownies, and bake closer to 25 minutes for a firmer texture.
Allow the brownies to cool in the pan for about 10 minutes before slicing and serving.

for up to five days for longer storage.
Freeze
by wrapping individual brownies and placing them in a freezer-safe container for up to two months. Thaw at room temperature before serving.
