  3. In a medium mixing bowl, stir together the flour, parmesan cheese, baking powder, garlic powder, Italian seasoning, and salt.

Can I use low-fat or fat-free cottage cheese?

Either one will work. Just note, the fat-free cottage cheese will not taste as rich as the low-fat or regular cottage cheese.

Do I need to blend the cottage cheese first?

Yes. This step helps create a lump-free batter that will bake evenly.

Can I make this crust ahead of time?

Yes, after baking and cooling the crust, cover it tightly with Saran Wrap and keep it in the fridge for up to two days before putting the toppings on it and baking it for 8-10 minutes.

Is this pizza crust keto-friendly?

It can be. Swap the gluten-free flour for almond flour and use full-fat cottage cheese for a low-carb, high-protein crust.

Can I use this for mini pizzas?

Yes, spoon smaller rounds of batter for individual pizza bases—reduce baking time by 3–5 minutes.
