I don’t know how I ended up with three bags of carrots in my fridge. Well, I did. We are moving in a little over a week! That’s right. We are PERMANENTLY moving to Turkey! Hooray!!!

Actually, I wasn’t really craving a carrot soup. I wanted something snack-worthy.
Fries! Who doesn’t like a nice french fry? Whether it be from a russet potato, sweet potato, or zucchini—they are all delicious in my book.
Ingredient to Make Roasted Carrot Fries
Large Carrots | Peeled and sliced into fry-like shapes. |
Corn Starch | Corn starch helps absorb excess liquid while baking and helps make these carrots crispy. |
Vegetable Spray | I like to use an olive oil spray. Feel free to use an avocado spray. |
Spices | You will need oregano, smoked paprika, garlic powder, salt, and pepper. |
For spicy roasted carrot fries, add a pinch of cayenne pepper.
How to Make Super Crispy Carrot Fries
Twice-baked carrot fries will undeniably be the best way to achieve ultimate crispiness. Here’s how:
- Once baked for the first time, allow to fully cool.
- Next, once fully cooled, place the carrot fries back into the oven for another round. This can be an additional 10-15 minutes —depending on how well-done you like them.
- Enjoy while hot in ketchup-y goodness!

Ingredients
- 2 pounds of large carrots peeled, and cut into fry-like shapes
- 1 tbsp corn starch arrowroot flour for whole30
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp dried oregano
- 2 tsp sea salt or salt to taste
- ½ tsp coarse black pepper
- Olive oil spray
Instructions
- Add the carrots to a large mixing bowl. Then, add all of the spices, corn starch, salt, and pepper. Toss with your beautiful, god-given hands or tongs to ensure each fry is fully coated in the seasonings.
- When ready, place the seasoned carrots on a baking sheet lined with parchment paper or a baking mat. Spead out the carrots so that they can get nice and crispy. Next, spray olive oil all over the fries.
- Finally, place the carrots in the oven at 400 °F for 20-25 minutes or until desired crispiness. Flip halfway through the cooking process.
- Serve and enjoy.
