How To Make Goat Cheese Stuffed Mushrooms

- First, preheat the oven to 400 degrees F and spray a baking pan or dish with nonstick cooking spray.
- Heat a little olive oil over medium heat in a medium skillet.
- Then, add the shallots and cook, stirring frequently. Cook for about seven to eight minutes.
- Next, stir in the cooking wine and cook for about three to five minutes.
- Rinse the mushrooms and pat them dry. Remove the stems and set the mushroom caps on the baking sheet.
- Brush the mushrooms with two tablespoons of olive oil and sprinkle lightly with salt.
- Mix the filling ingredients in a small bowl.
- Fill the mushroom cavities with the filling and then brush the tops of the filling with the remaining olive oil.
- Bake for fifteen to twenty minutes and allow the mushrooms to cool for five minutes.
- Finally, garnish with additional herbs, lemon zest, and toasted pine nuts, if desired, before serving.

- 1 small shallot diced small
- ¼ cup white cooking wine
- 1 pound white button mushrooms
- salt
- 4 ounces goat cheese softened
- 1 Tablespoon freshly squeezed lemon juice
- 1 lemon zested
- 1 teaspoon Worcestershire sauce
- ¼ teaspoon freshly ground black pepper
- ¼ teaspoon garlic powder
- 2 Tablespoons chopped fresh herbs
- ¼ cup pine nuts toasted
- ¼ cup panko breadcrumbs
OPTIONAL GARNISHES:

Instructions
PREP OVEN AND BAKING SHEET:
- Adjust the rack to the upper-middle position.
- Preheat oven to 400 degrees F.
- Lightly coat a baking sheet or a 3-quart baking dish with nonstick cooking spray.
CARAMELIZE SHALLOT:
- In a medium nonstick skillet, heat 1 teaspoon of olive oil over medium heat.
- Add the shallots and cook, stirring frequently, until softened and golden brown, about 7-8 minutes.
- Stir in the cooking wine and cook until the liquid has completely evaporated about 3-5 minutes.
PREP MUSHROOMS:
- While the shallots cook, rinse the mushrooms, pat them dry, and remove the stems.
- Arrange the mushrooms on the prepared baking sheet or baking dish.
- Brush the mushrooms with 2 tablespoons of olive oil and sprinkle lightly with salt.
MAKE FILLING:
- In a small bowl, combine the caramelized shallot, goat cheese, lemon juice and zest, Worcestershire sauce, pepper, garlic powder, herbs, pine nuts, and panko bread crumbs.
- Mix until creamy and well combined.
STUFF MUSHROOMS:
- Fill each mushroom cap with a generous teaspoonful of the filling.
- Brush the tops of the filling with the remaining 2 teaspoons of olive oil.
BAKE:
- Bake for 15-20 minutes or until the tops of the mushrooms are golden brown.
TO FINISH:
- Allow the mushrooms to cool for 5 minutes.
- Garnish with additional herbs, lemon zest, and toasted pine nuts (all optional).
