Stuffed Mushrooms with goat cheese is a classic appetizer you can order at many restaurants. I have created my version so you can enjoy them at home or for your next get-together without eating out. Serve them as an appetizer or a side dish. 

The only thing you will struggle with is trying only to eat a few because these are the best Stuffed Mushrooms!

This finger food is a great recipe for holiday dinners or gatherings. One of my favorite things about this easy Stuffed Mushroom recipe is that it seems complicated to make but really simple. Make them for your next event and wow all of your guests!

How To Make Goat Cheese Stuffed Mushrooms

  1. First, preheat the oven to 400 degrees F and spray a baking pan or dish with nonstick cooking spray. 
  2. Heat a little olive oil over medium heat in a medium skillet. 
  3. Then, add the shallots and cook, stirring frequently. Cook for about seven to eight minutes. 
  4. Next, stir in the cooking wine and cook for about three to five minutes. 
  5. Rinse the mushrooms and pat them dry. Remove the stems and set the mushroom caps on the baking sheet. 
  6. Brush the mushrooms with two tablespoons of olive oil and sprinkle lightly with salt. 
  7. Mix the filling ingredients in a small bowl. 
  8. Fill the mushroom cavities with the filling and then brush the tops of the filling with the remaining olive oil. 
  9. Bake for fifteen to twenty minutes and allow the mushrooms to cool for five minutes. 
  10. Finally, garnish with additional herbs, lemon zest, and toasted pine nuts, if desired, before serving.

Storage Tips

Store: Keep the mushrooms in an airtight container in the fridge for up to five days. 

Freeze: Place the mushrooms in a freezer-safe container and freeze for 2-3 months.

Thaw: Thaw overnight in the refrigerator.

Reheat: Reheat in a 350-degree F oven for 10-15 minutes or until heated.

After you rinse the mushrooms, pat them dry with a paper towel. You would not want to soak the mushrooms, but do a quick rinse. When you soak mushrooms in water, they retain the extra moisture, which can lead to soggy mushrooms after baking them.

Ingredients
 

  • 3 Tablespoons olive oil divided
  • 1 small shallot diced small
  • ¼ cup white cooking wine
  • 1 pound white button mushrooms
  • salt
  • 4 ounces goat cheese softened
  • 1 Tablespoon freshly squeezed lemon juice
  • 1 lemon zested
  • 1 teaspoon Worcestershire sauce
  • ¼ teaspoon freshly ground black pepper
  • ¼ teaspoon garlic powder
  • 2 Tablespoons chopped fresh herbs
  • ¼ cup pine nuts toasted
  • ¼ cup panko breadcrumbs

OPTIONAL GARNISHES:

  • Lemon zest
  • Chopped fresh herbs
  • Toasted pine nuts

Instructions

PREP OVEN AND BAKING SHEET:

  • Adjust the rack to the upper-middle position.
  • Preheat oven to 400 degrees F.
  • Lightly coat a baking sheet or a 3-quart baking dish with nonstick cooking spray.

CARAMELIZE SHALLOT:

  • In a medium nonstick skillet, heat 1 teaspoon of olive oil over medium heat.
  • Add the shallots and cook, stirring frequently, until softened and golden brown, about 7-8 minutes.
  • Stir in the cooking wine and cook until the liquid has completely evaporated about 3-5 minutes.

PREP MUSHROOMS:

  • While the shallots cook, rinse the mushrooms, pat them dry, and remove the stems.
  • Arrange the mushrooms on the prepared baking sheet or baking dish.
  • Brush the mushrooms with 2 tablespoons of olive oil and sprinkle lightly with salt.

MAKE FILLING:

  • In a small bowl, combine the caramelized shallot, goat cheese, lemon juice and zest, Worcestershire sauce, pepper, garlic powder, herbs, pine nuts, and panko bread crumbs.
  • Mix until creamy and well combined.

STUFF MUSHROOMS:

  • Fill each mushroom cap with a generous teaspoonful of the filling.
  • Brush the tops of the filling with the remaining 2 teaspoons of olive oil.

BAKE:

  • Bake for 15-20 minutes or until the tops of the mushrooms are golden brown.

TO FINISH:

  • Allow the mushrooms to cool for 5 minutes.
  • Garnish with additional herbs, lemon zest, and toasted pine nuts (all optional).
  • Serve and enjoy!
