Eat your favorite restaurant-style potato wedges without all the added oil by making them at home in your air fryer! With no boiling or frying required, these are an easy side dish to make any night of the week in thirty minutes.

You can enjoy healthier potato wedges and less mess when you follow this recipe. They are seasoned to perfection with a few simple ingredients you most likely already have. Even if this is your first time cooking in the air fryer, you can master this simple recipe.

What You’ll Love About These Air Fryer Potato Wedges:

  • Restaurant Quality: This recipe for homemade potato wedges replicates the great taste of potato wedges you order at restaurants in your kitchen.
  • Easy Recipe: Cooking in an air fryer makes cooking so simple. You will not need to worry about the mess of deep frying the potatoes in oil when you use this recipe.
  • Texture: One of my favorite things about the air fryer is how the cooking process yields crispier results than the oven. Making the potato wedges in the air fryer creates flavorful, crispy, fluffy potato wedges.

How To Make Easy Air Fryer Potato Wedges:

***For the full recipe instructions, see the recipe card below.

  1. First, prep potatoes by washing and scrubbing the potato skins.
  2. Then, on a cutting board, slice potatoes lengthwise into wedges with a sharp knife.
  3. Soak the cut potatoes in cold water for twenty-five minutes.
  4. Next, stir the salt, paprika, and onion powder in a bowl.
  5. Pat dry the potatoes with paper towels and toss in two tablespoons of oil.
  6. Sprinkle the spice blend over the cut potato wedges and preheat the air fryer to 390 degrees F.
  7. Place potatoes in the basket and cook for twelve minutes, shaking the basket halfway through the cooking time.
  8. Place the wedges in the large bowl and sprinkle parmesan cheese over the wedges until coated.
  9. Finally, cook for five to eight minutes or until the wedges are crispy, and garnish with parsley before serving.

Recipe Variations

  • Pair your crispy wedges with delicious dips like buttermilk ranch, sriracha mayonnaise, or classic ketchup.

Storage Tips

Serve: Serve immediately with your favorite dipping sauce, such as ranch or fry sauce.

Store: Store the leftover potato wedges in an airtight container for three to five days.

Freeze: Place the wedges in a single layer on a baking sheet once cooled. Freeze until frozen solid, about 2 hours. Then, transfer to a zip-top bag for 2-3 months.

Recipe FAQs:

Why do you soak potatoes in water before air frying?

Soaking the potatoes before cooking them in the air fryer helps create crispy potato wedges that do not stick together. The water removes excess starch from the potatoes.

Why are potatoes soggy in the air fryer?

After soaking the potatoes, dry them with a paper towel before placing them in the air fryer. If they are wet when you cook them, this can keep the wedges from getting crispy. Also, be sure not to overcrowd the air fryer basket with the wedges, which can lead to soggy potato wedges.

Are potatoes better in the oven or air fryer?

While you can make potato wedges in the oven, I prefer to make them in the air fryer. They turn out perfectly crispy every time!

Ingredients

  • 6 medium-sized russet potatoes about 2 lbs total
  • 1½ teaspoons sea salt
  • 1½ teaspoons smoked paprika
  • 1½ teaspoons onion powder
  • ½ cup freshly grated parmesan cheese
  • 2 Tablespoons olive oil
  • 2 teaspoons fresh chopped parsley optional

Instructions

Wash and clean:

  • Scrub the potato skins clean.

Cut and soak:

  • Cut each potato lengthwise into 8 wedges. Soak in cold water for 25 minutes.

Make the rub:

  • Combine salt, paprika, and onion powder in a bowl.

Dry and oil:

  • Drain and pat dry the potatoes. Toss in 2 tablespoons of oil.

Season:

  • Sprinkle the rub evenly over the potatoes.

Air fry:

  • Preheat your air fryer to 390°F.
  • Arrange the wedges in a single layer, avoiding overcrowding.
  • Air-fry for 12 minutes, shaking halfway through.

Add Parmesan:

  • Return the wedges to the large bowl and sprinkle parmesan cheese.
  • Toss the wedges until coated.

Finish cooking:

  • Air-fry for 5-8 additional minutes until crispy and tender.

Serve:

  • Garnish with parsley (optional) and enjoy with your favorite dipping sauce.

Notes

  • Air Fry in Batches: Air fry in 2 batches to ensure even cooking and crispy texture. This allows proper air circulation around each wedge.
  • Adjust Cooking Time: Cooking times vary depending on your air fryer model. This recipe was tested in a Cosori 1500-watt air fryer. Adjust time as needed.
  • Save Time with Pre-Soaking: Soak wedges up to 24 hours ahead for faster cooking. Simply cover and refrigerate until ready to use.
  • Dipping Delights: Pair your crispy wedges with delicious dips like buttermilk ranch, sriracha mayonnaise, or classic ketchup.
