Healthy Spinach Artichoke Dip
Ingredients
- ½ cup cottage cheese blended until smooth
- 4 oz low fat cream cheese
- ¾ cup shredded mozzarella cheese
- ½ cup Romano cheese
- 1 teaspoon minced garlic
- ¼ teaspoon red pepper flakes
- ¼ teaspoon salt
- ¼ teaspoon pepper
- 4 oz canned diced green chiles
- 14 oz can quartered artichoke hearts drained
- 10 oz frozen spinach thawed and drained
Instructions
- Preheat oven to 375℉. Spray a 2-quart oven safe dish with nonstick spray.
- Cream together the cottage cheese, cream cheese in an electric mixer.
- Mix in the mozzarella, Romano cheese until combined.
- Add in the garlic, red pepper flakes, salt and pepper, green chiles, artichoke hearts, and spinach mix until incorporated.
- Fold in the green chiles, artichoke hearts, and spinach.
- Pour the mixture into the baking dish and cook for 30 minutes or until all of the cheese is melted and the top is light brown.
- Serve with desired veggies, crackers or chips. Enjoy!
