Chickpea Cookies Recipe Variations and Substitutions

  • Nut Butter Variations: Instead of peanut butter, use almond butter, cashew butter, or sunflower seed butter for a different flavor profile.
  • Sweetener Options: Replace maple syrup with honey or agave nectar.
  • Nut Mix-Ins: Add chopped nuts such as almonds, walnuts, or pecans for added crunch and richness.
  • Protein Boost: Mix in a scoop of your favorite protein powder to increase protein content.

Recipe FAQs

How do these chickpea peanut butter cookies best store?

These cookies are best stored at room temperature in an air-tight container. However, they can also be frozen and thawed at room temperature until soft enough to eat.

Can I use regular-sized chocolate chips in place of mini chocolate chips?

Yes, feel free to use the chocolate chips you prefer in this recipe. Just keep it to ½ cup. Just make sure they’re dairy-free.

Can I eat the cookie dough before baking it?

Yes!! One of the great things about this recipe is that it has no flour and can be eaten raw! If you plan on eating the dough as dough, there is no need for the baking powder, so feel free to omit that from the recipe. The baking powder is simply there for baking purposes.

Love this healthier version of regular chocolate chip cookies! Made this for my kids for an after school snack and they absolutely loved it, and couldn’t tell that these weren’t “regular” chocolate chip cookies!
